Scale
Sauce Ingredients
- 1/3 cup soy sauce
- 1/4 teaspoon ground ginger
- 1 teaspoon sesame oil
- 2 teaspoons honey
- 1 teaspoon garlic (minced)
- 2 teaspoons cornstarch
Vegetables
- 1 medium zucchini, thinly sliced
- 2 carrots, thinly sliced
- 1 red bell pepper, sliced
- 4 cups broccoli florets
- 1 can (15oz) baby corn, drained
Other
- 1 teaspoon cooking oil (such as vegetable or canola oil)
Instructions
- Prepare Sauce: In a small bowl, whisk together the soy sauce, ground ginger, sesame oil, honey, minced garlic, and cornstarch. Ensure the honey dissolves fully and the mixture is smooth to avoid clumps.
- Heat Skillet: Place a large skillet or wok over medium-high heat and add the cooking oil. Heat until the oil is hot and shimmery, indicating it’s ready for vegetables.
- Cook Hard Vegetables: Add the sliced carrots and red bell pepper to the skillet. Stir fry for 2 to 3 minutes until they start to soften but remain crisp.
- Add Remaining Vegetables: Add the zucchini slices and broccoli florets to the skillet. Continue stir frying for another 2 to 3 minutes, allowing the vegetables to soften but retain texture.
- Finish with Baby Corn and Sauce: Add the drained baby corn and pour in the prepared sauce. Stir fry everything together for 3 to 4 minutes, allowing the sauce to thicken and coat the vegetables evenly. Remove from heat and serve immediately, ideally over steamed rice.
Notes
- Use fresh vegetables for best flavor and texture, but frozen broccoli florets can be substituted if needed.
- Adjust the amount of honey for a sweeter or less sweet sauce according to preference.
- If you want a spicier version, add crushed red pepper flakes or a splash of chili sauce to the sauce mix.
- For added protein, consider stirring in cooked tofu, chicken, or shrimp during the last few minutes of cooking.
- Serve this stir fry immediately to enjoy the crisp-tender texture of the vegetables.
