Scale
Ingredients:
- 4 ripe Roma tomatoes (diced)
- 1/2 medium red onion (finely chopped)
- 1–2 jalapeño peppers (seeded and finely chopped)
- 1/2 cup fresh cilantro (chopped)
- juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the diced tomatoes, red onion, jalapeños, and chopped cilantro.
- Squeeze the lime juice over the mixture, then add salt and pepper. Stir well to combine.
- Let the salsa sit for at least 10–15 minutes at room temperature to allow the flavors to meld. Taste and adjust seasoning if needed.
- Serve fresh with tortilla chips or as a topping for tacos, grilled meats, or salads.
Notes
- For a milder salsa, use just one jalapeño or replace with a milder pepper like poblano.
- For a juicier pico, use heirloom or vine-ripened tomatoes.
- Leftovers can be stored in the fridge for up to 2 days.
