Description

These Raspberry Cream Cheese Bites are a delightful treat that combines the buttery goodness of puff pastry with a creamy, sweet filling and bursts of fresh raspberry flavor. Easy to make and perfect for any occasion!

Ingredients

Scale

Puff Pastry:

  • 1 sheet puff pastry (thawed)

Cream Cheese Filling:

  • 4 ounces cream cheese (softened)
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Additional:

  • ½ cup fresh raspberries
  • 1 tablespoon raspberry jam (optional)
  • 1 egg (beaten, for egg wash)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare cream cheese filling: In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Prepare puff pastry: Unfold the puff pastry on a lightly floured surface and cut it into 12 equal squares. Spoon a small dollop of the cream cheese mixture into the center of each square, followed by fresh raspberries and a dab of raspberry jam if using.
  4. Shape the bites: Fold the corners of each pastry square toward the center, leaving some filling visible. Brush the edges with beaten egg for browning.
  5. Bake: Place the bites on the baking sheet and bake for 12–15 minutes until golden brown. Let cool, then dust with powdered sugar if desired.
  6. Serve: Serve warm or at room temperature.

Notes

  • Best served freshly baked
  • Frozen raspberries can be used after thawing and draining
  • Add lemon zest for a citrusy flavor
