Puff Pastry:
- 1 sheet puff pastry (thawed)
Cream Cheese Filling:
- 4 ounces cream cheese (softened)
- 3 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Additional:
- ½ cup fresh raspberries
- 1 tablespoon raspberry jam (optional)
- 1 egg (beaten, for egg wash)
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prepare cream cheese filling: In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Prepare puff pastry: Unfold the puff pastry on a lightly floured surface and cut it into 12 equal squares. Spoon a small dollop of the cream cheese mixture into the center of each square, followed by fresh raspberries and a dab of raspberry jam if using.
- Shape the bites: Fold the corners of each pastry square toward the center, leaving some filling visible. Brush the edges with beaten egg for browning.
- Bake: Place the bites on the baking sheet and bake for 12–15 minutes until golden brown. Let cool, then dust with powdered sugar if desired.
- Serve: Serve warm or at room temperature.
