For the Quesadillas:
- 4 large flour tortillas
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- 1 tablespoon granulated sugar
- 2 tablespoons unsalted butter
- 1/2 teaspoon ground cinnamon
- 2 tablespoons graham cracker crumbs
For Garnish:
- Whipped cream
- Extra strawberries
Instructions
- In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In another small bowl, toss the sliced strawberries with granulated sugar and set aside.
- Lay out the tortillas and spread half with the cream cheese mixture. Top with sugared strawberries and sprinkle lightly with graham cracker crumbs.
- Fold the tortillas in half to enclose the filling. Melt butter in a large skillet over medium heat. Place the filled tortillas in the skillet and cook for 2 to 3 minutes per side until golden brown and crisp.
- Remove from heat and sprinkle lightly with cinnamon. Cut into wedges and serve warm with whipped cream and extra strawberries.
Notes
- For extra decadence, drizzle with melted chocolate or caramel before serving.
- Blueberries or raspberries can be substituted for the strawberries.
- Best enjoyed fresh, but you can prep the filling ahead of time and assemble just before cooking.
