For the Quesadillas:

  • 4 large flour tortillas
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons graham cracker crumbs

For Garnish:

  • Whipped cream
  • Extra strawberries

Instructions

  1. In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In another small bowl, toss the sliced strawberries with granulated sugar and set aside.
  2. Lay out the tortillas and spread half with the cream cheese mixture. Top with sugared strawberries and sprinkle lightly with graham cracker crumbs.
  3. Fold the tortillas in half to enclose the filling. Melt butter in a large skillet over medium heat. Place the filled tortillas in the skillet and cook for 2 to 3 minutes per side until golden brown and crisp.
  4. Remove from heat and sprinkle lightly with cinnamon. Cut into wedges and serve warm with whipped cream and extra strawberries.

Notes

  • For extra decadence, drizzle with melted chocolate or caramel before serving.
  • Blueberries or raspberries can be substituted for the strawberries.
