Description

This hearty and flavorful vegetarian chili is Darryl’s famous recipe that’s perfect for a quick and satisfying meal. Made with dark kidney beans, vegetarian crumbles, and a rich tomato base seasoned with classic chili spices, it offers a comforting and protein-packed option for chili lovers. Topped with cheese and served with crunchy corn chips, this chili is a delicious crowd-pleaser that’s ready in just 25 minutes.

Ingredients

Scale

Chili Base

  • 2 cans (15 oz each) dark kidney beans, drained
  • 1 can (14.5 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 packet chili seasoning mix
  • Water (1 can measure, approx. 14.5 oz)

Protein

  • 1 bag vegetarian crumbles (e.g., Morning Star Starters)

Toppings and Sides

  • Cheese for topping (amount as desired)
  • Corn chips for serving

Instructions

  1. Heat tomato sauce: Place a large pot over low to medium heat. Pour in the can of tomato sauce and warm it gently.
  2. Add chili seasoning: Mix the packet of chili seasoning into the tomato sauce thoroughly until fully incorporated.
  3. Add diced tomatoes: Pour in the can of diced tomatoes and stir well to combine all the tomato ingredients.
  4. Mix in kidney beans: Add the two cans of drained dark kidney beans to the pot and stir to combine.
  5. Add vegetarian crumbles: Stir in the frozen vegetarian crumbles to the mixture evenly.
  6. Add water: Using one empty can (preferably the tomato sauce can), fill it with water and add this to the pot to loosen the chili and create a simmering liquid.
  7. Simmer: Bring the chili mixture up to a boil. Once boiling, reduce the heat to low and let it simmer for 10 to 15 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  8. Serve: Spoon the chili into bowls and top with your desired amount of cheese. Serve alongside crunchy corn chips for a classic chili experience.

Notes

  • Use vegetarian crumbles like Morning Star Starters for the best texture and flavor.
  • Simmering allows the flavors to meld together properly.
  • Adjust chili seasoning to taste if preferred spicier or milder.
  • Serve with additional toppings like sour cream or chopped green onions if desired.
  • For a thicker chili, reduce the amount of added water slightly.
