Instructions
- Heat Cream and Dissolve Coffee: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the instant coffee or espresso powder until it is fully dissolved, creating a coffee-infused cream.
- Combine with Chocolate: Place the dark chocolate in a heatproof bowl. Pour the hot coffee-infused cream over the chocolate and let it sit for 1-2 minutes to soften. Stir gently until the mixture becomes smooth and glossy. Then, add the vanilla extract and mix well.
- Chill Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for 1-2 hours, or until the mixture becomes firm enough to scoop and shape.
- Form Truffles: Using a small spoon or melon baller, scoop the chilled mixture into roughly 1-inch portions and roll each between your palms to form smooth balls.
- Coat Truffles: Roll each truffle in unsweetened cocoa powder or finely ground coffee to evenly coat. Place the coated truffles on a parchment-lined baking sheet to prevent sticking.
