Description

Crockpot Crack Chicken is a creamy, savory slow cooker recipe featuring tender chicken thighs cooked in ranch seasoning and cream cheese, then mixed with crispy bacon, green onions, and melted cheddar cheese. This easy-to-make dish is perfect for busy days and serves as a delicious main or sandwich filling.

Ingredients

Scale

Meat

  • 2 pounds boneless skinless chicken thighs

Seasoning & Dairy

  • 1 ounce packet ranch seasoning mix
  • 16 ounces cream cheese
  • 1 1/2 cups shredded cheddar cheese

Others

  • 8 slices bacon, cooked and chopped
  • 2 green onions, chopped

Instructions

  1. Prepare Chicken: Place the chicken thighs in an even layer at the bottom of the slow cooker. Sprinkle the ranch seasoning mix evenly over the chicken, then place the cream cheese on top of the chicken pieces.
  2. Cook Chicken: Cover the slow cooker with its lid and set on low heat. Cook the chicken for 6 hours until it is fork tender and cooked through.
  3. Shred and Mix: Using two forks, shred the chicken directly in the slow cooker. Stir the shredded chicken together with the softened cream cheese until the mixture is creamy and well combined.
  4. Add Bacon and Green Onions: Stir in the cooked and chopped bacon along with the chopped green onions thoroughly into the chicken mixture.
  5. Melt Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the mixture. Replace the lid and cook for an additional 15 to 20 minutes on low until the cheese is melted and bubbly.

Notes

  • For a thicker consistency, let the chicken mixture cook uncovered for the last 10 minutes to reduce excess liquid.
  • Serve this dish with rice, over baked potatoes, or as a sandwich filling in buns or wraps.
  • Bacon can be substituted with turkey bacon for a leaner version.
  • Make sure chicken is cooked through and reaches an internal temperature of 165°F (74°C) for safety.
