Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Boil Potatoes: Place the peeled and chunked potatoes in a large pot with salted water. Bring to a boil and cook for about 10 minutes until they are slightly tender but not fully cooked through.
- Drain and Steam: Drain the potatoes thoroughly and let them sit for a few minutes to allow excess moisture to steam off, helping to achieve crispiness later.
- Season Potatoes: Transfer the potatoes to a large bowl. Add olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper. Toss everything together until the potatoes are evenly coated with the seasoning mixture.
