Ingredients
Scale
Filling
- 2 cups shredded cooked chicken
- 2 cups cabbage and carrots mix (or coleslaw mix)
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 green onions, finely chopped
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Assembly
- 12 egg roll wrappers
- Cooking spray
Instructions
- Prepare Filling: In a large bowl, combine shredded chicken, cabbage and carrot mix, minced garlic, grated fresh ginger, finely chopped green onions, soy sauce, and sesame oil. Mix thoroughly to blend all flavors evenly.
- Assemble Egg Rolls: Lay one egg roll wrapper flat on a clean surface in a diamond shape. Place about 2 tablespoons of the filling slightly below the center of the wrapper.
- Fold and Roll: Fold the bottom corner up over the filling, then fold in the left and right sides towards the center. Roll tightly from the bottom to the top, sealing the top corner with a little water to ensure it sticks securely.
- Prepare for Air Frying: Lightly spray all sides of each assembled egg roll with cooking spray to help achieve a crispy exterior.
- Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for a few minutes.
- Arrange Egg Rolls: Place the egg rolls in a single layer inside the air fryer basket, making sure none of them touch for even cooking.
- Air Fry: Cook the egg rolls for 8 to 10 minutes, flipping them halfway through the cooking time to ensure both sides become golden brown and crispy.
- Rest and Serve: Remove the egg rolls from the air fryer and let them rest for 2 minutes. Serve warm with your favorite dipping sauce.
Notes
- Ensure the filling is not too wet to prevent soggy egg rolls.
- You can substitute chicken with cooked shredded pork, beef, or tofu for a different variation.
- Use water or a beaten egg to seal the egg rolls for better adhesion.
- Adjust the air frying time based on your specific air fryer model for optimal crispiness.
- Serve with sweet chili sauce, soy sauce, or peanut sauce for dipping.
