Ingredients
Scale
Chicken
- 4 pieces Boneless Skinless Chicken Breasts (Each weighing approximately 6 ounces)
- Salt to taste
- Black Pepper to taste
- 2 tablespoons Extra Virgin Olive Oil (For cooking the chicken)
Sauce
- 4 cloves Garlic (Minced)
- 2 cups Fresh Spinach Leaves (Washed and dried)
- 0.5 cup Chopped Sun-Dried Tomatoes (Preferably packed in oil)
- 1 cup Heavy Cream (For the creamy sauce)
- 0.5 cup Grated Parmesan Cheese (Freshly grated)
Instructions
- Pound and Season Chicken: Pound the chicken breasts to an even thickness of about ½ inch for uniform cooking, then season both sides generously with salt and freshly ground black pepper.
- Sear Chicken: Heat extra virgin olive oil in a large skillet over medium-high heat. Place the chicken breasts in the skillet and sear each side for 5-7 minutes until they develop a golden brown crust and are cooked through.
- Remove Chicken and Sauté Garlic: Transfer the cooked chicken to a plate and cover loosely with foil to keep warm. Reduce the heat to medium-low and add minced garlic to the same skillet, sautéing for about 30 seconds until fragrant.
- Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavor.
- Cook Spinach: Add fresh spinach leaves to the skillet and cook until wilted, which usually takes about 2-3 minutes.
- Add Cream and Simmer: Pour in the heavy cream slowly, stirring constantly. Let the mixture simmer gently until it thickens slightly, creating a creamy base.
- Add Parmesan Cheese: Stir in freshly grated Parmesan cheese until it melts fully and the sauce becomes smooth. Taste and adjust seasoning with additional salt and pepper if needed.
- Combine Chicken and Sauce: Return the chicken breasts to the skillet, spoon the sauce over them, and simmer together for another 2-3 minutes to meld the flavors.
- Rest and Serve: Let the chicken rest for a couple of minutes off the heat. Then plate the chicken with sauce spooned on top. Garnish as desired before serving.
Notes
- For best results, use chicken breasts of similar size for even cooking.
- If sun-dried tomatoes are dry-packed, rehydrate them in warm water before chopping.
- Feel free to garnish with fresh basil or parsley for extra freshness and color.
- This dish pairs wonderfully with pasta, rice, or crusty bread to soak up the creamy sauce.
- To reduce calories, substitute heavy cream with half-and-half, though the sauce will be less rich.
