Instructions
- Brown the sausage and sauté aromatics: In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon as it cooks. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic, Italian seasoning, and crushed red pepper flakes; cook for 1 minute until fragrant.
- Add broth and noodles: Pour in the chicken broth and bring the mixture to a boil. Add broken lasagna noodles and cook for 10–12 minutes, stirring occasionally, until noodles are al dente.
- Make the creamy sauce: Reduce heat to low. Stir in heavy cream, grated Parmesan, shredded mozzarella, salt, and black pepper. Simmer gently until the cheeses melt and the soup turns creamy and smooth.
- Add greens and finish: Stir in roughly chopped spinach and cook just until wilted, about 1–2 minutes. Adjust seasoning if needed.
