Description

A rich and creamy Alfredo lasagna soup that combines Italian sausage, tender broken lasagna noodles, and a velvety Alfredo sauce base. This comforting soup is packed with cheese, fresh spinach, and herbs, making it a hearty and satisfying meal perfect for chilly evenings.

Ingredients

Scale

Sausage and Base

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)

Soup and Cheese

  • 5 cups chicken broth
  • 8 lasagna noodles, broken into pieces
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Greens and Garnish

  • 2 cups fresh spinach, roughly chopped
  • Fresh basil or parsley for garnish

Instructions

  1. Brown the sausage and sauté aromatics: In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon as it cooks. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic, Italian seasoning, and crushed red pepper flakes; cook for 1 minute until fragrant.
  2. Add broth and noodles: Pour in the chicken broth and bring the mixture to a boil. Add broken lasagna noodles and cook for 10–12 minutes, stirring occasionally, until noodles are al dente.
  3. Make the creamy sauce: Reduce heat to low. Stir in heavy cream, grated Parmesan, shredded mozzarella, salt, and black pepper. Simmer gently until the cheeses melt and the soup turns creamy and smooth.
  4. Add greens and finish: Stir in roughly chopped spinach and cook just until wilted, about 1–2 minutes. Adjust seasoning if needed.
  5. Serve and garnish: Ladle the soup into bowls and garnish with fresh basil or parsley before serving hot.

Notes

  • For a lighter soup, substitute half-and-half for heavy cream to reduce fat content.
  • You can swap Italian sausage for ground turkey or chicken sausage for a leaner version.
  • The soup thickens as it cools, so add extra chicken broth when reheating to loosen the consistency.
  • Use gluten-free lasagna noodles to make this soup gluten-free.
