Chicken Thighs:
- 8 bone-in, skin-on chicken thighs
Marinade:
- 2 tablespoons olive oil
- juice and zest of 2 limes
- 3 cloves garlic, minced
- 1/2 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- salt and pepper to taste
Garnish:
- lime wedges
- extra cilantro
Instructions
- Prepare the Marinade: In a large bowl, whisk together olive oil, lime juice, lime zest, garlic, chopped cilantro, cumin, paprika, chili powder, salt, and pepper.
- Marinate the Chicken: Add the chicken thighs to the marinade, toss to coat evenly, cover, and refrigerate for at least 30 minutes or up to 8 hours.
- Preheat and Sear: Preheat the oven to 400°F (200°C). Sear the chicken skin-side down in an oven-safe skillet until golden and crispy.
- Bake: Flip the chicken, transfer the skillet to the oven, and bake for 20–25 minutes until cooked through.
- Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with extra cilantro and lime wedges.
