Chicken Thighs:

  • 8 bone-in, skin-on chicken thighs

Marinade:

  • 2 tablespoons olive oil
  • juice and zest of 2 limes
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • salt and pepper to taste

Garnish:

  • lime wedges
  • extra cilantro


Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lime juice, lime zest, garlic, chopped cilantro, cumin, paprika, chili powder, salt, and pepper.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, toss to coat evenly, cover, and refrigerate for at least 30 minutes or up to 8 hours.
  3. Preheat and Sear: Preheat the oven to 400°F (200°C). Sear the chicken skin-side down in an oven-safe skillet until golden and crispy.
  4. Bake: Flip the chicken, transfer the skillet to the oven, and bake for 20–25 minutes until cooked through.
  5. Rest and Serve: Let the chicken rest for 5 minutes before serving. Garnish with extra cilantro and lime wedges.

Notes

  • This recipe can also be grilled for a smoky flavor.
  • For a lighter option, use boneless, skinless thighs and adjust cooking time.
