Ingredients
Scale
Crust
- 1 ½ cups chocolate cookie crumbs (such as Oreo, with filling removed)
- 6 tbsp unsalted butter, melted
Mint Filling
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 2 cups heavy whipping cream
- 1 ½ tsp peppermint extract
- Green food coloring, optional
Ganache Topping
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Garnish
- Whipped cream
- Chocolate shavings
- Fresh mint leaves
Instructions
- Make the Crust: Preheat your oven to 350°F (175°C). Combine the chocolate cookie crumbs and melted butter in a bowl, mixing until the texture resembles wet sand. Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes, then allow it to cool completely.
- Prepare the Mint Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Stir in the peppermint extract and a few drops of green food coloring if desired until evenly mixed. Pour the filling into the cooled crust and spread it evenly. Refrigerate for 2-3 hours, or until set.
- Make the Ganache Topping: Combine the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until the chocolate melts fully and the mixture is smooth. Let the ganache cool slightly before pouring it over the chilled mint filling. Spread it evenly.
- Garnish and Serve: Chill the pie for an additional 30-60 minutes to allow the ganache to set firmly. Before serving, decorate the pie with whipped cream, chocolate shavings, and fresh mint leaves as desired.
Notes
- The pie requires refrigeration time to set properly, so plan ahead.
- Removing the filling from sandwich cookies ensures no extra sweetness and maintains the right texture for the crust.
- Green food coloring is optional and for visual effect only.
- For best results, use fresh peppermint extract to avoid artificial taste.
- The ganache topping should be slightly cooled before pouring to avoid melting the mint filling.
