Ingredients
Scale
Noodles & Chicken Marinade
- 8 ounces lo mein noodles (or spaghetti)
- 1 tablespoon sesame oil
- 1 pound boneless, skinless chicken breast, thinly sliced
- 2 tablespoons soy sauce (for marinating)
- 1 tablespoon cornstarch
Vegetables & Aromatics
- 1 tablespoon vegetable oil
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1 cup snap peas or snow peas
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
Sauce
- 1/4 cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
Instructions
- Cook the noodles: Prepare the lo mein noodles according to package instructions. Drain thoroughly and toss with 1 tablespoon of sesame oil to keep them from sticking together. Set aside.
- Marinate the chicken: In a small bowl, combine the thinly sliced chicken with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Mix well to coat evenly and let it marinate for 10 minutes to enhance flavor and tenderness.
- Cook the chicken: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 4 to 5 minutes until the chicken is cooked through and no longer pink inside. Remove the chicken from the pan and set aside.
- Stir-fry the vegetables: In the same pan, add the red bell pepper, shredded carrots, and snap peas. Stir-fry these vegetables for 2 to 3 minutes until they start to soften but remain crisp.
- Add aromatics: Add the minced garlic, grated ginger, and chopped green onions to the vegetables. Stir-fry for an additional 1 minute until fragrant.
- Combine all ingredients: Return the cooked chicken to the pan along with the prepared noodles. Pour the sauce mixture over everything and toss thoroughly to coat all ingredients evenly. Cook for another minute or two until everything is heated through and well combined.
- Serve hot: Remove from heat and serve the Chicken Lo Mein immediately while warm for the best taste and texture.
Notes
- You can substitute other vegetables like broccoli, cabbage, or mushrooms based on your preference to customize the dish.
- For extra heat, add a dash of sriracha sauce or red pepper flakes to the sauce before tossing.
- Ensure not to overcook the vegetables to maintain their crisp-tender texture.
- Use low-sodium soy sauce to control the saltiness of the dish.
