Ingredients
Scale
Lasagna Rolls
- 8 lasagna noodles
- 2 cups cooked shredded chicken
- 2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Sauce
- 2 cups Alfredo sauce (store-bought or homemade)
Instructions
- Prepare Oven and Dish: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Noodles: Cook lasagna noodles according to package directions until al dente. Drain and lay them flat on a sheet of parchment paper to cool slightly, preventing them from sticking together.
- Mix Filling: In a large bowl, combine shredded chicken, ricotta cheese, 1 cup mozzarella, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
- Assemble Rolls: Spread about 2 tablespoons of the chicken mixture evenly over each lasagna noodle. Roll up each noodle tightly and place seam-side down in the prepared baking dish.
- Add Sauce and Cheese: Pour Alfredo sauce evenly over the lasagna rolls. Sprinkle the remaining 1/2 cup mozzarella cheese on top.
- Bake Covered: Cover the dish with foil and bake for 20 minutes to heat through and meld flavors.
- Bake Uncovered: Remove the foil and bake an additional 10 minutes, or until the cheese is melted, bubbly, and slightly golden.
- Rest and Serve: Let the lasagna rolls rest for 5 minutes before serving to allow flavors to set. Garnish with extra chopped parsley if desired.
Notes
- For added flavor, use garlic or roasted red pepper Alfredo sauce.
- Rotisserie chicken is a great shortcut for quick preparation.
- Lasagna rolls can be assembled ahead of time and baked the next day for convenience.
