Instructions
- Prepare the filling: In a medium bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and creamy, ensuring a well-blended cheesecake flavor.
- Fill the wrappers: Lay one egg roll wrapper on a clean, flat surface with a corner pointing towards you. Spoon approximately 1 tablespoon of the cream cheese mixture into the center of the wrapper. Top this with 1 tablespoon of cherry pie filling for a burst of fruity sweetness.
- Roll the egg rolls: Fold the bottom corner over the filling, then fold in both side corners tightly around the filling. Continue rolling upwards firmly to enclose the filling completely. Seal the edge with a small dab of water to prevent it from opening during frying. Repeat this process for all wrappers and fillings.
- Heat the oil: In a deep pan or pot, pour vegetable oil to a depth of about 2 inches. Heat it over medium heat until it reaches 350°F (175°C), ensuring it is hot enough for frying but not smoking.
- Fry the egg rolls: Carefully place the egg rolls in the hot oil in batches, avoiding overcrowding. Fry each side for 2 to 3 minutes or until the wrappers turn golden brown and achieve a crispy texture. Use tongs to turn them gently for even frying.
- Drain and serve: Remove the fried egg rolls with a slotted spoon and drain excess oil on paper towels. Allow them to cool slightly. Dust with powdered sugar if desired, and serve warm or chilled for a delightful treat.
