Description

This Cherry Amaretto Tiramisu is a delightful twist on the classic Italian dessert, featuring layers of ladyfingers soaked in a rich coffee and amaretto liqueur mixture, creamy mascarpone cheese, and fresh cherries. The result is a luscious, no-bake treat that combines the flavors of cherry and almond with the indulgent creaminess of traditional tiramisu, perfect for an elegant dessert to serve guests or enjoy as a sweet finish to any meal.

Ingredients

Scale

Ingredients

  • 1 cup ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/2 cup amaretto liqueur
  • 1/2 cup brewed coffee or espresso
  • 1/4 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew coffee and prepare amaretto mixture: Brew 1/2 cup of coffee or espresso and allow it to cool slightly, then stir in 1/2 cup of amaretto liqueur to create the soaking liquid for the ladyfingers.
  2. Blend mascarpone and sugar: In a mixing bowl, blend together 1 cup of mascarpone cheese and 1/4 cup of granulated sugar until the mixture is smooth and creamy, forming the dessert’s luscious filling.
  3. Dip ladyfingers: Quickly dip each ladyfinger into the coffee-amaretto mixture just long enough to soak without becoming soggy, and arrange a layer of soaked ladyfingers in the bottom of your serving dish.
  4. Layer mascarpone and cherries: Spread half of the mascarpone mixture evenly over the ladyfingers layer, then scatter half of the pitted and halved cherries on top to add a fresh, fruity element.
  5. Repeat layering: Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture, and finish with the remaining cherries layered on top for a visually appealing dessert.
  6. Chill and serve: Cover the assembled tiramisu and refrigerate for at least four hours, or overnight, to allow flavors to meld and set; just before serving, dust the top with 2 tablespoons of unsweetened cocoa powder for a classic finish.

Notes

  • For best flavor, use freshly brewed espresso if available.
  • Adjust the amount of amaretto according to taste; reduce if a less boozy dessert is preferred.
  • If using frozen cherries, ensure they are thoroughly thawed and drained to prevent excess moisture.
  • This tiramisu can be assembled a day ahead to save time and enhance flavor melding.
  • Use a shallow dish for even layering and easier serving.
