  • 1 cup frozen peas and carrots
  • 1 ½ cups shredded cheddar cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat if necessary to reduce greasiness.
  3. Sauté Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Sauté for 2–3 minutes until the onions are softened and fragrant.
  4. Combine Ingredients: Stir in the uncooked rice, beef broth, cream of mushroom soup, Worcestershire sauce, dried thyme, salt, and black pepper. Mix well to evenly combine all the ingredients.
  5. Add Vegetables and Cheese: Fold in the frozen peas and carrots along with 1 cup of the shredded cheddar cheese, distributing them evenly throughout the mixture.
  6. Transfer to Baking Dish: Grease a 9×13-inch baking dish and spread the mixture evenly inside. Cover the dish tightly with foil to retain moisture during baking.
