Puff Pastry:

Filling:
- 8 ounces fresh mozzarella (cut into small cubes)
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh basil leaves (chopped)
- 1 tablespoon balsamic glaze
- Salt and black pepper to taste

Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prepare the pastry: Roll out the puff pastry sheet on a lightly floured surface and cut it into 6 equal squares.
- Fill the squares: In the center of each square, place mozzarella, cherry tomatoes, and basil. Drizzle with balsamic glaze and season with salt and pepper.
- Shape the bundles: Fold each corner of the pastry square toward the center to create a bundle, pinching to seal the edges.
- Bake: Place the bundles on the baking sheet, brush with beaten egg, and bake for 18–20 minutes until golden.
- Serve: Let cool for 5 minutes before serving. Drizzle with more balsamic glaze and olive oil if desired.
