Scale
Soup Base
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
Vegetables & Aromatics
- 1 onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
Spices & Seasonings
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil: In a large pot, warm the olive oil over medium heat to prepare for sautéing.
- Sauté aromatics: Add the diced onion and minced garlic to the pot and sauté until softened and fragrant, approximately 3-5 minutes.
- Add spices: Stir in the Cajun seasoning, paprika, dried thyme, dried oregano, and cayenne pepper, mixing thoroughly to coat the onions and garlic, allowing the spices to bloom.
- Add liquids: Pour in the chicken broth and heavy cream, stirring well to combine all the ingredients evenly.
- Add potatoes and season: Add the peeled and diced potatoes to the pot and season the mixture with salt and pepper according to taste.
- Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 20-25 minutes, or until the potatoes are very tender.
- Blend the soup: Use an immersion blender directly in the pot to blend the soup until smooth, or carefully transfer in batches to a traditional blender and puree until creamy.
- Adjust seasoning: Taste the soup and adjust salt, pepper, or spices if needed to balance the flavors.
- Serve and garnish: Ladle the hot soup into bowls and garnish with freshly chopped parsley for a bright, fresh finish. Enjoy your hearty Cajun Potato Soup!
Notes
- For a vegetarian version, substitute vegetable broth for chicken broth.
- Adjust cayenne pepper quantity depending on your heat preference.
- To add extra texture, reserve some cooked potato cubes before blending and stir them back in at the end.
- The soup can be made a day ahead and reheated; flavors will develop even more.
- Serve with crusty bread or a side salad for a complete meal.
