Pasta:
- 8 oz pasta (such as linguine or spaghetti)
Cabbage Mixture:
- 2 tablespoons olive oil
- 1 small head green cabbage (core removed and thinly sliced)
- 3 garlic cloves (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Additional:
- 1/2 cup chopped walnuts (toasted)
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Extra Parmesan and chopped parsley for garnish
Instructions
- Cook the Pasta: Cook pasta according to package directions, reserving 1/2 cup of pasta water. Drain and set aside.
- Sauté the Cabbage: In a skillet, heat olive oil, add cabbage, and cook until soft and beginning to brown. Add garlic, salt, pepper, and red pepper flakes; cook for another couple of minutes.
- Combine: Add cooked pasta to the skillet, along with walnuts, Parmesan, lemon juice, and a splash of reserved pasta water. Toss to combine.
- Finish and Serve: Adjust seasoning, garnish with Parmesan and parsley, and serve warm.

- To make it vegan, omit the Parmesan or use a dairy-free alternative.
