- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chopped green cabbage
- 2 carrots, peeled and diced

- 1/2 cup uncooked white rice
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce

- 4 cups beef broth or chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Brown the meat. Heat olive oil in a large pot over medium heat. Add ground beef or turkey and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.
- Sauté aromatics. Add diced onion and minced garlic to the pot and sauté for 2–3 minutes until softened and fragrant.
- Cook vegetables. Stir in chopped cabbage and diced carrots, cooking for an additional 3–4 minutes to slightly soften the vegetables.
- Add rice and liquids. Incorporate the uncooked rice, diced tomatoes, tomato sauce, and broth into the pot. Stir well to combine all ingredients.
- Season the soup. Add Worcestershire sauce, paprika, dried thyme, and season with salt and pepper to taste.
- Simmer the soup. Bring the soup to a boil, then reduce heat to low. Cover the pot and simmer for 25–30 minutes until the rice is tender and the cabbage is soft.
- Finish and serve. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley for a bright, fresh finish.
