  • 4 cups broccoli florets, chopped small

Instructions

  1. Sauté Aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and sauté until translucent. Stir in garlic.
  2. Create Roux: Sprinkle flour over the onions and stir to create a roux. Cook for 1–2 minutes.
  3. Add Liquids: Slowly whisk in broth, followed by milk and cream. Bring to a simmer.
  4. Cook Broccoli: Add broccoli and carrot. Simmer for 15–20 minutes until tender.
  5. Melt Cheese: Reduce heat and stir in cheddar until smooth. Season and serve hot.
