Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin using olive oil spray to prevent sticking and ensure easy removal of the bites.
  2. Combine Ingredients: In a large mixing bowl, combine the cooked and cooled quinoa, finely chopped steamed broccoli, shredded sharp cheddar cheese, grated Parmesan cheese, eggs, breadcrumbs (or almond flour), minced garlic, onion powder, salt, and black pepper. Stir everything together thoroughly until the mixture is well blended.
  3. Fill Muffin Tin: Scoop approximately 1 tablespoon of the mixture for each mini muffin cup. Press down slightly to compact the mixture, which helps the bites hold their shape during baking.
