Description

This Bisquick Chicken Pot Pie recipe is a comforting and easy-to-make family favorite. Combining tender cooked chicken, mixed vegetables, and a creamy sauce topped with a golden Bisquick crust, it delivers a hearty and satisfying main course perfect for weeknight dinners or cozy gatherings.

Ingredients

Scale

Filling Ingredients

  • 2 cups cooked chicken (shredded or chopped)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/2 cup chopped onion
  • 1 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping Ingredients

  • 1 cup Original Bisquick mix
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pot pie.
  2. Mix Filling: In a large bowl, combine the cooked chicken, frozen mixed vegetables, chopped onion, chicken broth, and cream of chicken soup. Stir in salt and black pepper until all ingredients are well incorporated.
  3. Prepare Pie Dish: Grease a 9-inch pie dish or baking dish and pour the chicken mixture evenly into it, spreading it out smoothly.
  4. Make Topping Batter: In a separate bowl, whisk together the Bisquick mix, milk, and egg until you achieve a smooth batter consistency.
  5. Top Filling: Pour the Bisquick batter evenly over the chicken and vegetable mixture in the pie dish, covering the entire surface.
  6. Bake: Place the pie dish in the preheated oven and bake for 30 to 35 minutes, or until the topping turns golden brown and a toothpick inserted into it comes out clean.
  7. Cool and Serve: Remove the pot pie from the oven and let it cool for a few minutes before slicing and serving to allow the filling to set slightly.

Notes

  • You can use rotisserie chicken for convenience and quicker preparation.
  • Feel free to add sautéed mushrooms or celery to the filling for extra flavor and texture.
  • To make the filling creamier, stir in 2 tablespoons of sour cream into the chicken mixture before baking.
