Description

This hearty and flavorful Beef Tips and Peppers recipe features tender top sirloin steak seared to perfection and simmered with vibrant bell peppers, onions, and a tangy sauce made with red wine vinegar and Worcestershire sauce. Finished with fresh herbs, this dish is perfect for a satisfying weeknight dinner that comes together quickly using simple ingredients and skillet cooking.

Ingredients

Scale

Meat

  • 2 pounds top sirloin steak, cut into bite-sized pieces

Fats and Oils

  • 3 tablespoons salted butter
  • 1 tablespoon olive oil

Seasonings and Sauces

  • Salt and pepper, to taste
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced

Vegetables

  • 3 bell peppers, chopped
  • 1 white onion, chopped

Garnish

  • Fresh parsley or preferred fresh herbs

Instructions

  1. Prepare the Steak: Set out the top sirloin steak at least 30 minutes before cooking to bring it to room temperature. Cut into bite-size pieces and generously season with salt and pepper.
  2. Sear the Meat: Heat olive oil and butter in a cast iron skillet over medium heat until hot. Add the steak pieces in batches to avoid overcrowding, searing them over medium-high heat. Toss them just enough to get a good sear on all sides, then remove the meat from the skillet and set aside.
  3. Deglaze the Pan: Pour the red wine vinegar into the hot skillet to deglaze, scraping up any browned bits stuck to the bottom. Add Worcestershire sauce and let it simmer for about 30 seconds to reduce and concentrate the sauce flavors.
  4. Sauté Vegetables: Add the chopped onions, bell peppers, minced garlic, and Italian seasoning to the skillet. Sauté the mixture over medium heat for 5 to 8 minutes, stirring occasionally, until the onions soften and the peppers become tender-crisp.
  5. Combine and Heat Through: Return the seared steak pieces to the skillet with the vegetables and sauce. Stir to combine and heat everything through for a few minutes so the flavors meld together.
  6. Garnish and Serve: Remove from heat and sprinkle with fresh parsley or your preferred fresh herbs. Serve immediately while hot for the best taste and texture.

Notes

  • Allowing the steak to come to room temperature before cooking ensures even cooking and better searing.
  • Use a cast iron skillet or heavy-bottomed pan for best heat retention and searing results.
  • Do not overcrowd the pan when searing the steak to ensure proper browning.
  • You can substitute red bell peppers with any color combination of bell peppers for visual appeal.
  • For a gluten-free version, verify that Worcestershire sauce used is gluten-free.
