Description

This Bacon Mushroom Stuffed Chicken recipe features tender chicken breasts filled with a savory mixture of crispy bacon, sautéed mushrooms, and melted cheese. Enhanced with a creamy honey-Dijon sauce, this dish offers a perfect balance of smoky, creamy, and tangy flavors, making it a delicious and satisfying main course ideal for weeknight dinners or special occasions.

Ingredients

Scale

Chicken and Stuffing

  • 4 chicken breasts
  • 8 oz bacon
  • 8 oz mushrooms, sliced
  • 8 oz cheese, grated (such as mozzarella or cheddar)
  • 1 tsp oil
  • salt and pepper, to taste

Sauce

  • ¼ cup mayonnaise
  • 1 Tbsp sour cream
  • 3 Tbsp honey
  • 1 ½ Tbsp Dijon mustard
  • â…› tsp paprika

Instructions

  1. Prepare the filling: Cook the bacon in a skillet until crispy, then chop it into small pieces. In the same skillet, add a teaspoon of oil and sauté the sliced mushrooms until they are tender and golden. Combine the cooked bacon, sautéed mushrooms, and grated cheese in a bowl. Season with salt and pepper to taste.
  2. Prepare and stuff the chicken: Preheat your oven to 375°F (190°C). Create a pocket in each chicken breast by slicing horizontally without cutting all the way through. Stuff each chicken breast evenly with the bacon, mushroom, and cheese mixture. Secure the opening with toothpicks if necessary.
  3. Cook the stuffed chicken: Place the stuffed chicken breasts in a baking dish. Mix the mayonnaise, sour cream, honey, Dijon mustard, and paprika in a small bowl to create the sauce. Spread the sauce evenly over each stuffed chicken breast. Bake in the preheated oven for about 25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  4. Serve: Remove the toothpicks carefully, let the chicken rest for a few minutes, then serve warm with your choice of side dishes.

Notes

  • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
  • Feel free to substitute the cheese with your favorite melting cheese like Monterey Jack or Gruyère for different flavors.
  • To reduce calories, use reduced-fat cheese and mayonnaise options.
  • Make sure not to overstuff the chicken breasts to ensure even cooking.
  • The honey-Dijon sauce adds a sweet and tangy glaze; adjust the amount of honey based on your sweetness preference.
