  • 1 cup dark or milk chocolate chips


Instructions

  1. Prepare the Coconut Mixture: In a mixing bowl, combine the shredded coconut, powdered sugar, melted coconut oil, vanilla extract, and salt. Stir until all ingredients are well combined and the mixture is sticky enough to hold its shape.
  2. Form the Bites: Scoop out a spoonful of the coconut mixture and roll it into a small ball with your hands. Flatten the ball slightly and press an almond into the center. Reshape around the almond to create a firm bite. Place each bite on a parchment-lined baking sheet.
  3. Chill the Bites: Refrigerate the bites for about 15–20 minutes to firm them up, making them easier to dip in chocolate.
  4. Melt the Chocolate: Place the chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring between each, until smooth and fully melted.
  5. Dip the Bites: Using a fork or spoon, dip each coconut bite into the melted chocolate, ensuring it is completely coated. Let the excess chocolate drip off, then place the coated bite back onto the parchment-lined baking sheet.
  6. Chill Again: Place the chocolate-coated bites back in the fridge for another 15–20 minutes, or until the chocolate is fully set and hardened.
